Equally gorgeous as it is delicious, this offering in La Jolla uses salmon belly in a new and unexpected way. House-cured salmon is highlighted with paper-thin slivers of cucumber, pickled mustard seeds and red onion. A wasabi crème fraîche adds creaminess and bit of tang to the refreshing dish."
